Barbecuing is now much more than just cooking meat over hot coals. Barbecuing and BBQ have become a way of life. High-quality ingredients and the very special aroma of grilled food, which largely enhances the natural flavour, are just some of the reasons why everything simply tastes better when cooked over a fire.
Barbecuing is one of the oldest methods of food preparation. After the discovery of fire, it was certainly the next thing humanity did, alongside hunting and gathering. And yes, people would gather around the fire pit after a hunt that had been more or less successful. They would enjoy the game or simply the warmth – but the fire pit was always the hub of conversation.
Also, just so you know: the coolest parties still take place in the kitchen – or by the barbecue!
That’s why we’ve decided to bring fire back to the people. Away from induction hobs, steam cookers or cooking apps. Just fire, enjoyment and a passion for good food – nothing more, but certainly nothing less. Perhaps we can rekindle the fire in one or two of you and show that the most primal form of cooking isn’t rocket science, but rather passion, enjoyment and communication. That’s cooking over a fire. Sustainability, animal welfare and organic – all terms that the food industry is keen to champion and promote in the media. We know our producers. Wherever possible, our products come from the local region. If it’s organic, it’s genuinely organic. Preferably from small, family-run businesses that produce their goods with passion, great dedication, personal commitment and, in some cases, a willingness to make sacrifices.
Of course, we can’t do entirely without goods from other countries or suppliers who don’t produce sustainably all the time. We don’t want to – and can’t – do without them entirely. Enjoyment should be fun. Judged without judgement. And not everything that doesn’t grow on our own doorstep needs to be demonised.
We believe we’ve found a good balance that everyone can live with. Without dogmatic compromises. After all, it’s openness to the new or the unfamiliar that makes the whole thing exciting in the first place. Besides, you don’t eat scallops from Japan or fruit from South America every day. It’s the dose that makes the poison.
Conscious enjoyment is certainly better than eating products from factory farming or industrial production every day out of habit. To quote Anthony Bourdain: “Your body is not a temple, it is an amusement park. Enjoy the ride”.
It’s quite simple. Barbecuing requires fire. And wine? Hardly any other foodstuff is as dependent on the elements as wine. Water, air and earth – without the interplay of these elements, viticulture would not be possible. And in a way, it also needs fire in the form of sunlight.
Hardly any other drink is as multifaceted or interprets the soil on which it thrives as well as wine. Why have we chosen Zell am See, of all places, to be the hub of barbecue culture and culinary enjoyment? It’s quite simple. Nestled in the heart of the Alps, Zell am See is a real tourist hotspot. Excellent facilities, easy access by train or car, and unrivalled panoramic views make the region a dream destination – in both summer and winter.
For years, numerous events centred on fine dining and wine have been held here. So it was only natural to establish a new centre for barbecue and wine enjoyment right here. And, incidentally, this is where we’re based. Even if that might make one or two people a little envious.
